Tuscan Shrimp

Tuscan Shrimp

Creamy Sun-Dried Tomato Garlic Shrimp is not shy when it comes to flavor, creaminess, and the “wow” factor.  

Ingredients

  • 2 pounds peeled, deveined large shrimp (tail on or off)
  • 3 garlic cloves, minced
  • 3 tablespoon Sutter Buttes Extra Virgin Olive Oil
  • Salt and pepper for shrimp
  • ¼ cup sun-dried tomatoes (optional)
  • 1 jar of Sutter Buttes Tuscan Sun-dried tomato simmer sauce
  • 2 cups spinach
  • 1/2 cup fresh grated parmesan cheese
  • Basil for garnishing (optional)

Direction

  1. Sprinkle peeled, deveined shrimp with salt & pepper and garlic powder on both sides.
  2. Heat the oil in a skillet over medium-high heat. Once hot, add the shrimp and cook for 4-5 minutes/side or until golden.
  3. Take the shrimp out of the pan and set aside.
  4. Add Sutter Buttes Tuscan Sun-dried tomato sauce to the pan.Heat for a minute.
  5. Add spinach and sun-dried tomatoes.
  6. Add the shrimp back to the pan.
  7. Cook for 5 minutes or until the shrimp is fully cooked through and spinach is wilted.
  8. Stir in the basil and season with extra salt & pepper if needed.

Serve immediately with pasta, mashed potatoes, or rice.
